Bread Pudding

For as much as I hate baking, I've done it a few times already...

Anyway, is bread pudding technically Southern?
Ingredients:

2 (stale) Croissants
1 ½ cups milk
2 tablespoons cinnamon
1 teaspoon nutmeg
2 eggs
Dried blueberries
½ cup sugar

1: Chop croissants into 1 inch cubes
2: Mix together milk cinnamon, nutmeg, sugar, and eggs.

3: Toss croissants with blueberries

4: Fill cupcake/muffin tins with croissants/blueberries
5: Fill each tin with milk concoction. The bread should basically be drowning.

6: Bake at 350 degrees for about an hour or until toothpick cleanly slides into and out of a muffin.

Cost breakdown:
I work at a coffee shop/cafĂ© and we have a bunch of these things lying around. At the end of the day we throw out old pastries so I didn’t want them to go to waste.
In addition I took some cinnamon, nutmeg, and blueberries (we have some for the oatmeal we sell). The only things I really provided myself were the milk and eggs.

So basically these bread pudding muffins were free, kinda. 

Shrimp and Cheesy Grits!!

Seriously. This is just gonna turn into a Southern Style cookblog. I swear I must've been Southern in a past life.
Anywho... Onto the classic Southern dish.
Shrimp and Grits!!!!!!!!

Ingredients:



  • ¼ lb shrimp (around 6~10 shrimp depending on how big your shrimp are), peeled and deveined
  • ¼ cup polenta
  • ½ bell pepper
  • ¼ Onion
  • 1/3 cob corn
  • ½ cup milk
  • ¼ cup cheddar cheese, shredded

1: Cut corn off the cob. Chop bell pepper and onion.

2: In a skillet heat a small amount of oil, add corn, bell pepper, and onion. Salt and pepper.

3: Boil milk in a pot, add polenta.
4: Add corn, bell pepper, and onion to polenta.

5: Coat shrimp with salt and pepper, cook shrimp.
6: To polenta add shredded cheese. Add salt and pepper to taste.

7: Plate and enjoy!


Cost breakdown:
  • Shrimp: $5.49/4= $1.37
  • Polenta: $1.69/8= $0.21
  • Bell pepper: $0.30/2= $0.15
  • Onion: $0.20/4= $0.05
  • Corn: $0.39/3= $0.13
  • Milk: $0.30/cup x ½ cup= $0.15
  • Cheddar Cheese: $3.02/3= $1.00


Total: $1.37+$0.21+$0.15+$0.05+$0.13+$0.15+$1.00=b
Side note I: I did have some left over polenta though…

I seriously think I'm Southern.

Pulled Pork Sliders (because if it's tiny it's fancy, right?)

 Ingredients:

For Pulled Pork Sliders:
  • 1/3 lb pork shoulder
  • 2~4 tablespoons sugar
  • 2~4 tablespoons soy sauce
  • 2~3 ounces tomato sauce
  • Chili Flakes (optional)
  • 4 Biscuits (from Southern Fried Chicken, not pictured)



For Peach Slaw:
  • 1/8 head nappa cabbage
  • 1 carrot
  • 1/8~1/4 cup milk
  • ¼ jalapeno, ribbed and seeded

1) Cut pork into 1 inch cubes.

2) Place in pan and sear off all edges.

3) In a small pot add all remaining ingredients plus about 3 ounces of water. Taste concoction; add more sugar or soy sauce depending on personal preference.

4) Add meat. Simmer for about an hour.

5) Once cooked and tender take two forks and pull meat apart.


Side note I: If you want you can use your hands or just use a knife to chop the meat up.

6) Place an equivalent amount on each biscuit, split in half.

While pork is simmering:
1) Chop nappa cabbage, peach, carrot, and jalapenos.

2) Combine vinegar, sugar, and milk.

3) Combine everything. Let sit until pork finishes cooking.



Cost Breakdown:
Sliders:
  • 1/3 lb pork: $3/3= $1 
  • Sugar: I’m assuming everyone has on hand…
  • Chili flakes: $0.02?
  • 1/3 can Tomato Sauce (8oz):  $0.69/3= $0.23
  • 4 biscuits: $0.10x4= $0.40 (Check this for full breakdown)

Sliders Total: $1+$0.02+$0.23+$0.40= $1.65 for four
Per Slider: $1.65/4= $0.41

Peach Slaw:
  • Nappa Cabbage: $1.27/8= $0.16
  • Carrot: $0.07
  • Jalapeno: $0.08/4= $0.02
  • Peach: $1.15/3= $0.38 
    • $0.38/2= $0.19
  • Milk: $0.30/3= $0.10
  • Vinegar: Uhmm.. The bottle doesn’t have serving sizes but I’m assuming not much.

Slaw Total: $0.16+$0.07+$0.02+$0.19+$0.10= $0.54+Vinegar

Meal Total: $1.65+$0.54= $2.19

I’m Southern! Not really (but I wish I was!).

This is what today’s dinner’s was made of:


But before we get into the actual cooking, remember those whole chickens I bought at Costco? Time to get my butcher skills on! For reference I watched this Worst Cooks in America clip (over and over again).
Side note I: I’m not really a fan of Richard Irvine (kind of cocky, right?) but I looooooove me some Anne Burrell.

 So here’s my chicken before…

 I kept a breast, put what I plan on using the rest of the week in the fridge and whatever's left in the freezer. Also make sure to keep the carcass; definitely have to use it to make a chicken broth/stock later.
Side note II: I kept the neck of the chicken to put in the broth but I threw out the heart and livers. If you like (or love) to eat chicken liver by all means keep it and make something yummy out of it.

Onto the cooking!
This is another two serving dinner, btw.
Fried Chicken:
  • 1 chicken breast, skinned and cut in half 
  • 1/3 cup Bisquick mix 
  • Pinch of New Mexico Chili Powder (any pepper will work; i.e. paprika, cayenne, etc.) 
  • Salt and Pepper
  •  1 egg (I’m actually using the leftover egg that I used to seal the ravioli last night with)
Vegetables
  • 1 Zucchini 2 Squash Side
    note III: Both came from the bag of “bargain” produce I bought 
  • Salt and Pepper
  • 2 ¼ Cups Bisquick Mix 
  • 2/3 Cup Milk
"Gravy":
  •  ¼ Can Cream of Mushroom Soup (from yesterday!)
  • 1/8 Cup Milk 
  • Salt and Pepper
Biscuits: Follow directions. I didn’t have a cookie cutter so I used a small cup that I had. After I cut the initial batch I re-kneaded the dough and cut a handle more. In total I cut 12 biscuits total. I stuck eight in the freezer on a tray spaced apart and once they were fully frozen I stuck them in a Ziploc.  My pretty little biscuits baking in my badass convection oven.

 Fried Chicken and Vegetables
 1)
  •  Pound out chicken (I didn’t have a meat mallet so I used the back of a pan), salt and pepper both sides
  •  Cut zucchini and squash into bite sized pieces
 2) Scramble egg and dip chicken, then dip chicken into a mix of the Bisquick, chili powder, salt, and pepper; I used a Ziploc to make the process easy

 3) I’m too lazy to actually fry things so I pan-fried the chicken. While this was happening I heated some oil in separate pan and started cooking the veggies (don’t forget to salt and pepper!) 
Side note IV: I'm not sure when I picked it up but apparently I've successfully learned how to multitask! 

“Gravy” 
1) Add condensed soup, milk, and salt and pepper to a sauce pan and heat 

Plating
Cut the biscuits and half (my biscuits were kind of small so I used two per plate) and place the chicken on top. Pour the “gravy” on top. Serve veggies on the side.
Side note #I lost count: I saved the skin from the chicken breast and fried it up nice and crispy. Definitely not healthy but oh so yummy and if Food Network's taught me anything, it's to garnish (preferably with edible things). 



Cost Breakdown:
Fried Chicken:

  • 1 Chicken breast (probably around 6 oz): $1.19/lb x 6/16 lb= $0.45 
  • 1/3 Cup Bisquick o $4.29/box x 28 servings/box= $0.15 
    • 1 serving=1/3 cup 
  • New Mexico Chili Powder o Unsubstantial cost 
  • 1 egg: o $2.79/dozen/12= $0.23 
Fried Chicken Total: $0.45+ $0.15+ $0.23 = $0.83 

Vegetables:

  • Zucchini and Squash $1.39/bag x ¼ bag= $0.35 

Vegetables Total: $0.35

Biscuits:

  • 2 ¼ Cups Bisquick $0.15/serving x 6.75=$1.03 
  • 2/3 Cup milk o $2.39/8 cups= $0.30/cup 
    •  $0.30/cup x 2/3 cup= $0.20 
Biscuits Total: $1.03+$0.20= $1.23
Per Biscuit: $1.23/12= $0.10 each 
    $0.10 x 4= $0.40 

“Gravy”

  • $1.69 x ¼ can= $0.43 
  • $2.39/8 cups= $0.30/cup
    •  $0.30/cup x 1/8 cup= $0.04 

Gravy Total: $0.43+$0.04 =$0.47

Total Cost: $0.83+ $0.35+ $0.40+ $0.47 = $2.05 
Cost per Serving: $2.05/2 =$1.03/serving

Final side note) I went to Fenton's for dessert with my friend's and on the way there I was feeling kind of nauseous. Turns out I may have given myself heartburn :( This has to be a sign I did Southern food right, right?
